Thaumatin (also knownas talin) is a low-calorie sweetener and flavour modifier. The protein is oftenused primarily for its flavour-modifying properties and not exclusively as asweetener. Some proteins in the thaumatin family ofsweeteners are roughly 2000 times more potent than sugar.

Water soluble Thaumatinis accessible in white fine powder form. This sweetener has been produced by following solvent extraction method. It is naturally present in Actinidia chinesis fruit. This low calorie sweetening factor is used as effective flavor modifier. Water based solution of Thaumatinis has 1.8 to 10 ph range. Concentrated salt based solution of this substance reduces its sweetening properties. This amorphous powder based substance is free from odor and has distinctively sweet taste. This low calorie based flavor modifier has stable chemical properties under acidic working condition. It is used as one of the key ingredients for fruit juice, confectionery products etc.
