Xylitol is categorized as a sugar alcohol. Sugar alcohols combine traits of sugar molecules and alcohol molecules. Their structure allows them to stimulate the taste receptors for sweetness on your tongue. Xylitol is found in fruits and vegetables and is therefore considered natural.
